Recipe // Pizza Chicken

80% of getting kids to eat dinner is marketing, which is why I call this dinner “Pizza Chicken” instead of Healthy (gag) Grilled Chicken Parmesan. 4 out of 5 Fuscos eat this dinner happily, which is a hit rate I consider a success since the outlier would only eat Nutella & Cheddar Goldfish if permitted. Here’s the non-recipe:

PIZZA CHICKEN
Serves 6

*Mix up a marinade of 1/2 cup extra virgin olive oil, the juice of 2 lemons, four minced garlic cloves, 2 tsp. Italian seasoning (I like Oaktown Spice Shop Erbe Italiane di Lusso), kosher salt & freshly-cracked pepper to taste.

*Halve 2 lbs of boneless skinless chicken breasts horizontally & dump the cutlets into the marinade for an hour or so.

*Preheat oven to 375 degrees.

*Grill chicken on an indoor grill pan or bbq. Whatevs.

*Place grilled chicken breasts on a sheet pan, topping each cutlet with a spoonful of tomato sauce (the only jarred sauces we use are Rao’s or Classic Jersey Italian Gravy), a slice of fresh mozzarella & a basil leaf. Place in oven for 7-10 minutes just until the cheese gets melty.

*Serve with roasted broccolini, maybe a caesar salad & definitely some garlic bread so that one kid who refuses to eat chicken doesn’t starve. (Hi, Mac!)
